I always see these cute little coconut smoothie bowls on Instagram, and since I am staying with my friend for a few days before I leave for New York, we thought it would be a good time to give them a try!
The coconut I bought wasn’t that fresh, so I just ended up using it as a bowl and not drinking the coconut water or eating the meat, but it was really fun to make, so I thought I’d share the details here. 😊
First things first: you’re going to need a coconut. Not the green young coconuts, but the smaller brown ones.
Then you’re going to need to break it in half so you have two little smoothie bowls.
My friend and I followed this video, but instead of whacking the coconut with the hammer in our hand (which I guarantee would have resulted in a smashed finger), we took the coconut into the driveway and hit the coconut with a hammer until it cracked in half (shout out to Lauren for getting the job done!). This is the video that we watched.
Then you just fill it up with smoothie! Any smoothie bowl recipe will do, but this is what we used.
- 6 frozen bananas, sliced thin
- 1 cup frozen blueberries
- 1/4 cup homemade almond milk
Blend it all up in a food processor or high speed blender, scoop it into the coconut shells and top with shredded coconut.
Delish and so tropical! Just one more way that I am attempting to bring the Hawaiian lifestyle to my home in Halifax. 😎
