The other day I was telling my friend about my mom’s chocolate macaroon cookie recipe- not like the fancy sandwich cookies from Paris, but the messy delicious chocolatey things that I think some people call haystack cookies (or something like that).
Anyways, the other morning I was adding things to my oatmeal, and I realized I basically had made an oatmeal version of macaroon cookies. It was DELICIOUS! So I wanted to share it here today.
I used to be totally against sugar and went through multiple periods of eating sugar-free. I no longer put any restrictions at all on what I can and can’t eat, but I really do feel better when I stay away from refined sugar. Because of this, I had no plans of making or eating the real chocolate macaroon cookies, so I was really excited when I accidentally made the oatmeal version because it is so delicious and much healthier.
This is such a delicious way to start your day! I hope you love it.
HEALTHY CHOCOLATE MACAROON COOKIE OATMEAL RECIPE
1/2 cup oats
1 cup water OR milk/nut milk (I use cashew milk)
2 tablespoons cacao or cocoa powder
2-3 tablespoons unsweetened shredded coconut
maple syrup to taste
Make the oatmeal following the instructions on the bag (cook times vary depending on which kind of oats you use. Liquid to oat ratio may vary as well).
Once oats are cooked, mix in the remaining ingredients, and top with berries if you are using them. Grab a spoon and enjoy!
So easy, just the way I like my meals to be.
