Today, Olivia, from Liv’s Healthy Life, has another amazing recipe for us! This vegan Coconut Thai Soup, looks so delicious, and it couldn’t be simpler to make (you know how I don’t like spending a lot of time cooking!).

1 can light coconut milk
1 cup vegetable broth + 1 cup water
1 handful snow peas
juice from ½ lime
2 carrots, coined
2 green onions, chopped
1 tsp ginger
1 tsp curry powder
1 tbsp sugar
1 cup cooked noodles
a few shakes chili flakes
Put all the ingredients into the pot except the noodles, snow peas and spinach. Heat until it simmers. When the soup has been simmering for at least 15 minutes, add the noodles, snow peas and spinach. Cook for one more minute. Serve hot and enjoy!
