I have a super delicious recipe to share with you today! A few months ago, I featured my friend Anik Gallant on my interview series, My Happy Healthy Life. Today Anik is sharing an amazing Chocolate Chia Zucchini Bread recipe with us.

I LOVE summer!!!
Hot sunny beach days, swimming, BBQs with friends, camping, late night stargazing…
but…. my favorite summer thing to do is harvesting and munching on fresh, delicious, organic veggies from my own garden!!
I’ve been picking, grating and baking zucchini-everything this past week. Making muffins and breads and fritters… and then finally I made enough zucchini breads to narrow it down to this delectable hearty chocolaty zucchini bread!!
Please know that I had very strict criterias for this bread. It needed to be delicious, dense, moist, chocolaty, not too sweet, freezable, kid-friendly and most of all awesome enough to replicate over and over again until the end of zucchini season!
Here it is.
2 cups oat flour
1 cup brown rice flour
1/2 cup cacao powder
2 Tbsp chia seeds
1 Tbsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp Himalayan salt
1/2 cup coconut oil, melted
1 Tbsp maple syrup
1/2 cup cane sugar (or coconut sugar)
2 large organic eggs or 2 flax eggs (see note)
2 cups grated zucchini, packed
1/2 cup unsweetened almond milk
1/2 cup chocolate chips
Preheat oven to 350 degrees and oil 2 standard size bread pans.
In large bowl, mix oat flour, rice flour, cacao powder, chia seeds, baking powder, baking soda, cinnamon and salt.
In second bowl, whisk together coconut oil, maple syrup, sugar and eggs (or egg replacer). Then mix in the grated zucchini and almond milk.
Pour the wet ingredients into the dry and mix well together using wooden spoon. Fold in chocolate chips.
Distribute batter among the 2 greased bread pans. Smooth top of batter with wet fingers.
Bake for 35-40 minutes or until toothpick comes out clean. Wait 15 minutes before removing bread from pans. Cool on cooling rack or cut and enjoy warm.
*Note – To make 1 flax egg mix 1 Tbsp ground flax seeds with 3 Tbsp warm water and let sit for 5 minutes to thicken.
