It is a gorgeous day here in Halifax- perfect fireworks weather I thought I’d celebrate here on the blog by sharing this delicious Key Lime Pie Smoothie recipe.
A friend asked suggested I make a recipe for this, and I am so happy with how it turned out! You’re going to love it. For some reason I thought Key Lime Pie was full of kiwi, so after she suggested it I went out and bought 5 of them, and then I went home and googled actual key lime pie recipes for inspiration and realized there were no kiwis involved. Sometimes I like kiwis, but sometimes they kind of weird me out (not sure why), so I am just as happy that they aren’t needed.
When I went to take photos for this post, I realized my camera was dead, so I had to use my iPhone. I usually can’t be bothered to get my camera out for day to day pictures, but I like to use it for my food pics. But the iPhone came through for me today
I originally made this recipe as a “nice cream” (aka vegan ice cream- because it’s nice to the animals ), and then from there made it into a smoothie. So you have both options. If you don’t have an intense blender like a Vitamix, you’ll want to use a food processor if you decide to make it as a nice cream.
Key Lime Pie Smoothie & “Ice Cream” Recipe
3 Frozen Bananas
1 tablespoon shredded coconut OR coconut flakes
2 tablespoons canned coconut milk
Juice of 2 limes
Zest of 1/2 lime
Almond Milk (for smoothie only)
Blend all ingredients or mix in a food processor.
